Cinnamon - 1 stick
Star Anise - 3
Cloves - 3
Cardamons - 3
Curry Leaves - one twig or 10 leaves
Chilli powder - 1 tbsp
Baba's meat powder - 3 - 4 tbsp
Fresh ingredients:
Red Onions - 2 - 3 large - chopped
Tomatoes - 3 large - chopped
Potatoes - 2 - chopped
Ginger - half inch
Garlic - 4 cloves chopped
Chicken - a whole chicken cut in pieces (fats & skin removed)
Method:
Marinate Chicken, after cleaning the pieces in water and salt.
- pound garlic and ginger together to form paste
- rub paste all over chicken
Leave aside.
Meanwhile -
1. Heat 4tbsp of oil in pot - when hot, throw in cinnamon, star anise, cloves
2. Add curry leaves
3. Add onions and fry for couple of seconds till onion is transluscent
4. Add tomatoes and potatoes
5. Add chilli powder and stir fry for a good minute
6. Put in the marinated chicken pieces; when they turn white, add in water till the surface is just barely covered.
7. Add 3-4 tbsp of Baba's curry and let it boil
8. A few minutes into the boiling add in the cardamons (split the skin to reveal the pods a bit)
Check on the pot - after a good 15mins at least, if the chicken looks soft & cooked, add Salt to taste - usually a good heaped 2 tsp of sea salt.
My addition for the added tang and spice -
Add in a paste of 2 Fresh Red Chillies and an inch of ginger (pounded together). Stir this in toward the end of the cooking.
